Zucchini Veggie Frittata

As I explained in my last post, I’ve been experimenting with ways to use zucchini lately. Here is one of them 🙂

I make frittatas for dinner pretty frequently because they are so easy and versatile. You can use any veggies, potatoes, or even rice. Sometimes I add cheese, sometimes I don’t. We love them topped with salsa and served with roasted potatoes.
If I saute the veggies in my cast iron pan, I just pour the egg mixture on top and put the whole thing in the oven. This time I wasn’t sure about the oven-safeness of the pan I was using so I transferred it to a 9 x 13 pan to bake.

Zucchini Veggie Frittata

Ingredients:

  • 2-3 cups diced zucchini
  • 1/2 red onion, diced
  • 1/2 white onion, diced,
  • 1 red pepper, diced
  • 1 1/2 cups mushrooms, large pieces
  • 1-2 tsp Braggs “Sprinkle” 24 Herbs & Spices Seasoning
  • Salt & pepper to taste
  • 12 eggs
  • 1/4 c. milk of your choice (I use unsweetened plain almond milk)

Instructions:

Saute all veggies in a non-stick pan or with a minimal amount of oil or liquid until tender.
Saute Veggies
Add seasonings and stir.
Beat eggs and milk.
Pour veggies in a lightly oiled 9×13″ pan.
Cover with egg mixture.
Bake at 350 degrees for 30 minutes or until solidly set.
