Here are some healthy truffle recipes you can use to enjoy the sweet decadence of truffles using whole food ingredients. 

 

Did I mention these are simple? And dark? And chocolaty? These are super flexible.  You can add whatever flavors you like!

 

These chocolate truffles are so simple a child can make them – and they do in my house! We made them last semester in the Health Hacks and Yummy Snacks class, and the kids had a lot of fun coming up with their own recipes.

Here’s the basic truffles recipe plus lots of variations.

(some variations: Chocolate Mint Truffles, Dark Chocolate Crushed Pretzel Truffles, Chocolate Orange Truffles, Orange Cashew Balls)

 

 

Simple Dark Chocolate Truffles

 

Ingredients:

  • ½ c. almonds
  • ½ c. cashews
  • ¼ c. cocoa powder or raw cacao
  • 6-8 dates or 1/8-1/4 c. liquid sweetener like maple syrup or honey
  • Pinch of salt

 

Directions:

  • Blend all ingredients until very smooth.
  • Roll into small balls. Chill until firm. Keep in the fridge.
  • Add in options (if desired): coconut, peppermint essential oil, sweet orange essential oil, crushed pretzels, chocolate chips, chopped nuts, cacao nibs
  • Alternatively, you can roll the plain balls in any of the add-in options above (or cinnamon sugar, powdered sugar, cocoa powder) if you want.
  • If too liquidy, add some finely ground oats, chia seeds, or flax seeds

 

Here’s one variation the kids in my class came up with. They were so good!

Orange Cashew Truffles

 

 Ingredients:

  • 1 cup cashews
  • 6 dates
  • 6 drops orange essential oil
  • sea salt
  • 2 T chia seeds

 

Directions:

  • Blend all ingredients until very smooth.
  • Roll into small balls.
  • Roll in Crushed pretzels.
  • Keep in the fridge.
