Healthy, delicious whole food crackers can be hard to find. These meet my requirements for flavor AND nutrition. I hope you like them!

Quinoa Flax Crackers

 

Ingredients:

  • 1-1 1/2 cup water
  • 4 Tablespoons flax seed
  • 4 tablespoons chia seeds
  • 2 cup cooked quinoa
  • 1 tablespoon tamari
  • 1 teaspoon garlic powder
  • sea salt (to taste) (optional)

 

Directions:

  • Preheat oven to 350 degrees.
  • Soak the flax and chia seeds in the water for 5 to 10 minutes, stirring every once in a while to break up any clumps.
  • Blend the quinoa, tamari and garlic powder in a food processor until it starts to hold together.
  • Add the flax/chia gel to the food processor with the remaining ingredients and blend until combined. Add more water if necessary. The consistency should be spreadable, but not too runny 🙂
  • Spread the mixture in a thin layer on a cookie sheet covered with parchment paper.
  • Sprinkle with salt of other seasonings if desired. Taste the batter to determine the taste, but be aware that the seasonings concentrate as these bake. (ie – they end up saltier than the batter) Speaking from experience here.
  • Bake at 350 degrees for 15-20 minutes or until lightly browned.
  • Flip onto another baking sheet by placing it on top of the first one and flipping it over. Gently remove the parchment paper or silicone sheet.
  • Score with bread knife into desired shapes and sizes.
  • Bake another 10-15 minutes until that side is also done.
  • If not crisp enough, but turning brown . . .  turn oven off. Open door for 30 seconds to get the heat down slightly then close it up and leave the cookie sheet in there for an hour or two longer (with the oven off)
