I have vivid memories of making chocolate chip cookies at my house after school with friends, but somehow the cookies never got baked. We just used to eat the cookie dough right out of the bowl! Now that I’m a grown up (haha) I still love cookie dough, but I prefer the whole food version. How about a recipe for some nutrient-dense, healthy – but still delicious – cookie dough balls? Heck yeah! The best part is these nutritious treats take a quick five minutes to make so they’re great for feeding hungry kids after school or hungry moms looking for a yummy snack.

Oatmeal Chocolate Chunk Cookie Dough Balls

Oatmeal Chocolate Chunk Cookie Dough Balls

(about 15 balls)

 

Ingredients:

  • 1 cup cashews

  • 1 cup pitted dates (soaked and drained if needed)*

  • ¼ cup shredded coconut, unsweetened

  • ½ cup oats (use gluten free oats if gluten is an issue for you)

  • Pinch of sea salt

  • 1 tsp. vanilla extract

  • ¼ cup dark chocolate chunks

Directions:

  1. Blend cashews in food processor until in small pieces.

  2. Add dates, coconut, sea salt, and vanilla. Blend until smooth and combined. When it all sticks together in a ball you will know it’s ready.

  3. Add oats and chocolate chunks. Pulse until just combined or until desired consistency. I like to leave the chocolate in delicious chunks.

  4. Roll into balls about 1 tablespoon in size.

  5. Store in fridge up to two weeks or freezer for several months.

* If dates are hard or have started to crystallize, just soak them in some warm water for a half hour or so and drain well before using.
