Plant-based dips and spreads make my life so much easier. Whether I’m making a sandwich or looking for something to take with me on the go to liven up my veggie sticks, having a good dip can mean the difference between ho hum and oh, yeah, baby!

This recipe is a breeze to make, but it is best to soak the almonds first for several hours. You can put the almonds in some water overnight and then quickly throw this together in the morning.

Veggie Wrap with Chunky Green Sandwich Spread

In this picture, I spread some of the Fresh-n-Chunky Green Sandwich Spread on a sprouted grain tortilla, added some lettuce and tomatoes, and wrapped it up.  It was simple, yet delicious and satisfying lunch.

Fresh-n-Chunky Green Sandwich Spread/Dip Recipe

Ingredients:

  • 1 cup almonds, soaked overnight or for about six hours and drained
  • 3 stalks celery, cut in large chunks
  • 1 large dill pickle, cut in several pieces
  • 1 avocado
  • pinch of sea salt
  • 1/4 c. green onions, diced

Do this:

  • Pulse almonds, celery, and pickles in food processor until finely chopped (the size of rice), but not a mush.
  • Add avocado and sea salt. Process until avocado thoroughly incorporated.
  • Add green onion. Pulse just enough to mix in.
