Sometimes I have ice cream for dinner. But only if it’s Coconut Milk Ice Cream 🙂

Coconut Milk Ice Cream with Salted

Ingredients

  • 1 can coconut cream (this is the THICK stuff!)
  • 1 can lite coconut milk
  • 1-2 bananas (you can add more if you like it sweeter)
  • 4-8 dates, pitted (soaked if needed) (add more if you like it sweeter)
  • pinch of sea salt
  • 1 tsp vanilla
  • 10 dates, pitted and soaked for an hour
  • pinch of sea salt
  • water as needed

Instructions

Chill the coconut cream and coconut milk for a few hours.

Blend coconut cream, coconut milk, banana, dates, sea salt and vanilla until smooth.

Freeze as directed in your handy, dandy ice cream maker.

If you don't have an ice cream maker you can do it this way: Freeze the blended mixture in a freezer-safe bowl for about a half hour. Blend in a food processor or blender. Return to bowl in the freezer for about a half hour. Blend. Freeze. Repeat until it's as you like it.

For "Caramel Sauce":

Pour water off dates, but save it.

Blend dates and salt with just enough water to make it a thick, syrupy texture. Add more water if needed.

A small blender like a Bullet is handy for this job since it's a small amount.
