Cocoa Coco Hazelnut Bars – Healthy Snack Recipe

If you like to eat, but are concerned about ingredients in processed foods, you’re probably on the lookout (like me) for easy, healthy snack recipes. Luckily I have plenty of tasters in my house so I’m here to help you out! These Cocoa Coco Hazelnut Bars are reminiscent of Nutella with the taste of toasted hazelnuts and rich cocoa, but heartier and healthier. Plus you whip up a batch in about ten minutes! Yea!

This recipe could be raw if you used raw nuts, honey, and cacao powder, but the toasted nuts add an amazing dimension of taste that can’t be matched – in my opinion – with raw nuts.

Cocoa Coco Hazelnut Bars

 

Ingredients:

  • 2 cups toasted hazelnuts
  • 1/3 cup coconut butter, softened* (or make your own like this)
  • 1/4 cup cashews
  • 1/4 cup maple syrup or coconut nectar
  • 1/4 cup cocoa or cacao powder
  • 1/8 tsp sea salt
  • 3 T coconut oil*

 

Instructions:

  1. Blend hazelnuts into a nut butter consistency in a food processor. Add remaining ingredients and blend until smooth.
  2. Press into a 6×8″ dish lined with waxed paper or parchment paper (sprayed with coconut oil). Smooth top with oiled hands or a spatula.
  3. Refrigerate couple hours until firm.
  4. Cut into squares.

* To soften coconut butter or coconut oil simply place the jar in a bowl of hot water.

Store in refrigerator.
