Chopped Salad with Toasted Almonds, Pomegranate Seeds, and Orange Vinaigrette

Last week the kids in my class made a chopped salad with toasted almonds, celery, pomegranate seeds and an orange vinaigrette. It was a hit all around although there were disagreements about whether or not there should be almonds and onions. They didn’t include onions, but I would definitely include it in mine! I’m planning on bringing this to Thanksgiving sans the paper plates 🙂

Chopped Salad with Orange Vinaigrette

Salad Ingredients:

  • 1 head romaine, chopped
  • 1 handful arugula
  • 2 stalks celery, diced
  • 1 pomegranate, seeded
  • 1 T red onion, chopped
  • 1/ c. toasted almonds, sliced

 

Vinaigrette Ingredients:

  • 2 T orange juice
  • 1 T balsamic vinegar
  • 1 T olive oil
  • 1 tsp cashew butter
  • 2 tsp honey
  • Salt and black pepper to taste

 

Toss all ingredients together and serve

    I’m soooo glad you mentioned that you are bringing this to Thanksgiving dinner! Now I don’t have to ask!!! How about I pick up the pomegranate & I’ll start gathering the seeds! Yummmmmmeeeee! I hope the parents appreciate the gifts you are giving each family every week! …one more thing to be thankful for!
