Chocolate Almond Cookies Four Ways – Healthy Cookie Recipe (Vegan, GF, Raw)

After you’ve made that delicious, creamy almond milk you are left with a pile of almond pulp. What do you do with it? Here are some healthy cookie recipes to use up the almond pulp and feed the hungry crew at the same time. There are four variations – two raw and two cooked. All are super easy.

Healthy Cookie Recipe

(Vegan, Gluten Free w/Raw Option).

Ingredients:

Ingredients for Chocolate Almond Cookie Dough

Dough:

1 cup almond pulp (leftover from making almond milk)

8 dates, soaked, pitted

1/8 tsp sea salt

2 T cocoa powder

5 T almond butter

1 T melted coconut oil

splash of vanilla

 

Optional toppings:

coconut sugar

coconut butter

 

Directions:

Blend dough ingredients in food processor until well combined.

 

Two options for raw cookies:

Raw Option 1:

  • Roll dough into 1-inch balls.
  • Eat right away or refrigerate until set.

 

Raw Option 2:

  • Roll into 1-inch balls.
  • Make a thumbprint in the middle.
  • Fill with softened coconut butter. (Soften coconut butter by putting the jar in a bowl of hot water.)
  • Refrigerate until set.

 

Two options for baked cookies:

Baked Option 1:

  • Preheat oven to 350 degrees.
  • Roll dough into 1-inch balls and place on lightly oiled cookie sheet.
  • Flatten with a wet fork to make criss-crosses (think peanut butter cookies).
  • Sprinkle with coconut sugar if desired.
  • Bake for 10-12 minutes until bottoms are lightly browned.

 

Baked Option 2:

  • Preheat oven to 350 degrees.
  • Roll into 1-inch balls and place on lightly oiled cookie sheet.
  • Make a thumbprint in the middle (to be filled later).
  • Bake 10-12 minutes until bottoms are lightly browned.
  • While cookies are baking soften jar of coconut butter in a bowl of hot water.
  • When cookies come out of the oven put a dollop of coconut butter in the thumbprint hole. As it cools it will harden again.

 

Store all cookies in the refrigerator. They keep about a week.

Makes about a dozen cookies.
